Pasta with a Spicy Sausage Sauce


A popular meal to cook for the kids when they have friends around for tea is this sausage recipe from Jamie Oliver's "30 Minute Meals". The sauce has a slight kick to it and an interesting mix of flavours.  I have changed it a wee bit from the original recipe to be more child friendly. It seems to work, empty plates all around this evening. I'm not just limiting this to children, I love it too.

Ingredients 
Serves 6
4 spring onions
1 carrot
1 stick of celery
1 fresh red chilli
1 x 6 pack of good quality sausages (approx 400g)
half tsp fennel seeds
half tsp dried oregano
1 tbsp balsamic vinegar
1 x 400g chopped tomatoes
salt and pepper
Olive oil
500g dried pasta

Method

Trim the spring onions, carrot and celery.  Blitz the vegetables in the food processor with the chilli. Add the sausages,fennel seeds and oregano to the processor and keep pulsing until well mixed, then spoon the mixture into a hot frying pan with a tbspn of olive oil.  Keep breaking up and stirring occasionally for around 15 min. When the sausage is cooked and starting to brown slightly add the balsamic vinegar and the tin of tomatoes.  Put the pasta on to cook, drain and add to the sausage sauce mixture.  Serve with a salad and some grated parmesan.
