Chicken with a parmesan and lemon crust

The sun has shone, the children haven't been fighting, it's been a good day. Even better, I think it is the first time this year that it's been warm enough to eat dinner in the garden. I was having one of those moments in the shop when we popped in to pick something up for tea, where I couldn't think of anything to cook. Then I remembered a little scrap of paper in my recipe book with this recipe. Perfect, quick and summery. It's another recipe I asked for after eating this meal at a friends house so I don't know where it originated from. 
I served it tonight with some salad potatoes which I just mashed and buttered and some rocket salad with a balsamic glaze.


Ingredients
Serves 4
4 Chicken breasts
2 slices of bread made into breadcrumbs
rind of a large lemon
salt and pepper
a sprinkle of dried oregano
juice of a lemon
45g freshly grated parmesan
2 tablespoons of olive oil
butter on top


Method
Heat the oven to 180C. Mix together the breadcrumbs, parmesan, rind and juice of the lemon, salt and pepper, oregano and olive oil. Place the chicken breasts in a roasting dish, then press the topping onto each chicken breast, put a little bit of butter to each chicken breast. Bake in the oven for about 40 minutes until the chicken breasts are cooked and the topping is crispy and golden.

  5. Yes, she didn't have a clue! I love it when I do that. I used to cook scrambled eggs with smoked salmon and just tell them it was "special pink scrambled eggs" they ate the lot - unfortunately Kate got wise!!

  6. I don't know why I have this silly name, must've set it up ages ago but have never really used it! This will make you laugh Sally; having forgotten to add the seasoning to the meat balls last week I had just started to put the topping on the chicken when I realised I'd forgotten the parmesan!! Rather a crucial ingredient!! Thankfully I was able to scrape it off and add it before it went into oven. I also managed to break the food processer trying to make the bread crumb - I dropped the lid and cracked it :( Don't think I'm cut out to be a goddess, domestic or otherwise, whatever my google name may suggest! Anyway, I'm sure it will be worth it - Josh has already run around shouting "we're having a lovely tea tonight" so at least the anticipation is there...!
