Roasted new potatoes
have mentioned these before in the recipe for 'slow roasted marmalade pork'. They are so easy to cook as there is no need to par boil them first. I used a 1kg bag of new potatoes, I halved the larger ones. Stick them in a hot oven about 200C, drizzled with olive oil and sprinkled with salt. I added some fresh rosemary. Roast for about 40 mins to an hour until beautifully golden, then crush slightly with a potato masher then put back in the oven for 10 or so more minutes.
