Salmon and asparagus bake
Serves 4
As many new potatoes as you require for 4, halved
Olive oil
4 salmon fillets (skin on)
a bunch of asparagus, snap the woody part off
Half a punnet of cherry tomatoes
Garlic, how ever much you fancy
1 tin of anchovies and the oil they came in
1 lemon quartered
4 slices of prosciutto ham
Method
Heat the oven to 200ºC. Coat the new potatoes in olive oil, season and place in the oven for about 20 minutes until they are starting to cook and turn golden. After 20 minutes add all the other ingredients, salmon skin side up and pour the oil from the anchovies in the roasting dish too. Place in the oven until the salmon is cooked through, probably about 20 minutes. Serve with a nice green salad.

Emailed them to see what I could do but haven't had a reply. Your blog is going from strength to strength, well done .x
