Spinach and feta roll



This is a recipe I have made on repeat since seeing it on Instagram . It’s like a spanakopita but a much easier version without all the layers of filo pastry. The recipe uses frozen spinach and ready rolled puff pastry . I have also made it with fresh spinach which works just as well. I made a couple for a family gathering and they proved extremely popular . The leftovers are just as good cold . 

Ingredients 

1 pack of ready rolled puff pastry 

2 garlic cloves crushed 

350g frozen spinach or a bag of fresh spinach

1 pack of feta cheese 

100g cheddar or Gouda 

1 egg 

Optional , chopped spring onions and zest and juice of a lemon . 

Salt and pepper 

Mozzarella optional 

Sesame or poppy seeds 


Method

Remove the pastry from the fridge about 1o mins before making. 

In a bowl mix the spinach , feta, grated cheese , egg, garlic , seasoning , spring onions and lemon if using . Combine well. If using fresh spinach try to break the leaves down while mixing . 

Lay out your puff pastry on a baking tray . 

Place the spinach mixture on the pastry as shown below. 



Then score the pastry at an angle right up to the mixture. 

On alternative sides take the pastry over to cover the filling in a braiding like fashion as shown below .

 


It doesn’t have to be perfect just make sure they aren’t too many gaps for the filling to escape . 

Once covered , brush the pastry with an egg wash and if you want to use the mozzarella slice and  place the slices along the full length of the roll. Sprinkle with sesame seeds or poppy seeds .

Cook in a hot oven about 200०c  until the pastry is golden and crispy for about 20 minutes .  

Leave to cool a little then enjoy .
