Tasty Chicken Kebabs with homemade Tzatziki
I have made this meal a couple of times now. One night when I really couldn't find the energy to cook I made this meal in about 15 minutes. I didn't marinade the chicken just fried and added some nice spices, paprika, peri peri salt and cayenne pepper. The other night I followed the recipe from an instagram account I follow by Chris Baber, a young Northern chef , who often has live instagram cooking sessions of easy recipes in his home kitchen, This was one of them.
Ingredients
Serves 2
350g chicken mini fillets
Marinade
2 tbs greek yoghurt
2 cloves garlic grated
1 tsp cumin
1 tsp paprika smoked
2 tsp oregano
Zest and juice 1/2 lemon
1 tbs extra virgin olive oil
Tzatziki
300g greek yoghurt
1/2 cucumber
1 clove garlic grated
Small bunch mint finely chopped
Squeeze lemon
2 tbs extra virgin olive oil
4 flat breads or pittas
Method
Pop the chicken in a bowl with the marinade ingredients, mix and leave to marinade for 2 hours in the fridge
Remove the chicken from the fridge 30 minutes before cooking
To grill :
Preheat the grill to medium - grill for 4-5 minutes each side until slightly golden and cooked through
To bake :
Bake in a preheated oven at 180 degrees for around 20 minutes
To chargrill / fry
Cook in a hot griddle or frying pan for a few minutes on each side until slightly charred and cooked through
For the Tzatziki. Grate the cucumber into a bowl, season with salt, allow to sit for 2 minutes the squeeze out and excess moisture
Add the remaining ingredients to the cucumber, and mix together
Warm the breads
Scatter on some tomatoes and lettuce, top with chicken then drizzle of the Tzatziki
