Delia Smith’s Vegetarian Moussaka with ricotta topping




This is a classic veggie recipe, it requires quite a bit of time to make as there are numerous stages involved, though it’s certainly not difficult. I probably haven’t made this for about 20 years, which is crazy as it was one of my vegetarian dinner party favourites. 
The ricotta topping is a treat laden with Parmesan, and there are plenty of flavours coming through from the lentils and aubergine mixture. Don’t be thinking that this is a bland meat substitute, it’s anything but.
