American breakfast pancakes with bacon and maple syrup
We had a lovely lunch at my cousins house today, and I have come away with yet another new recipe which I will try in the near future. So instead of posting a meal today I'm posting breakfast. Just now and again I will get up on a weekend and make these lovely pancakes. They may not be everybody's cup of tea with the salty bacon and sweet maple syrup, but I love that combination of flavours. A treaty way to start the day. This recipe is taken from Nigella Lawson "How to be a Domestic Goddess".
Ingredients
225g plain flour
1 tbsp baking powder
pinch of salt
1 tsp sugar
2 large eggs beaten
30g butter, melted and cooled
300ml milk
butter for frying
Method
Put all the ingredients into a blender and blitz. Leave the mixture for 20 minutes before using it. Heat some butter in a frying pan. Pour the mixture into a jug,it's easier to pour the batter into the pan.
When you cook the pancakes all you have to remember is when the upper side of the pancake is blistering and bubbling it's time to cook the second side and this only needs about 1 minute.
The number you make depends on the size you want the pancakes. I made them quite large this morning and that made about 10.
