Blackened cod with crispy rice

 



After  searching through the good food website for cod recipes last night and not finding anything I fancied ,  I finally came across this Jamie Oliver recipe for BLACKENED cod . I adapted the recipe slightly, and should have left the cod to marinade for much longer , but as I was hungry I got  straight on with making it . Make the marinade with the ingredients below and leave the cod to marinate for at least two hours . I added some chilli flakes and a splash of rice wine vinegar to the marinade which wasn’t in the recipe . I cooked some basmati rice . When it was cooked I placed the marinated cod loins on top of sliced lemon and the rice and used the leftover marinade on the rice . I added few spring onions and drizzled the fish with a bit more honey, then cooked in the oven at 180C for about 20 minutes . I slightly overcooked mine as the loins were very thick , so the timing does  depend  on the thickness . The rice was crispy and flavoured with the lemon and marinade. The fish sweet and salty. Thoroughly lovely it was. Serve with some green vege . 




Ingredients 

Serves 2

2 cod fillets  or loins 

3 tablespoons runny honey

3 tablespoons low-salt soy sauce

3 tablespoons white miso paste

1 teaspoon sesame oil

A splash of rice vinegar 

Some dried chilli flakes
