Tomato, avocado and buffalo. mozzarella Salad

 

How beautiful does this Salad look ? I’m just heading back from a perfect weekend in Sussex. Lovely company, wonderful food , beautiful weather . All meals consumed outside in the sunshine in a gorgeous garden under the prettiest parasol. I have to say I had no involvement in this lunch apart from eating it. It was simply a mix of tomatoes , sliced avocado, buffalo mozzarella , some basil leaves , seasoning and a dash of good olive oil. It was accompanied by some crusty warm bread for mopping up the juices. Just the thing for a crowd on a warm summers day .
